My favourite recipes for National Vegetarian Week

This week is National Vegetarian Week and while I’m not a full veggie, I do make a concentrated effort to eat at least 3 – 4 meat-free meals a week to get a vitamin boost.

Here are some of my favourite veggie meals, plus inspiration for some new ones I’m going to be trying out this week:

– Hemsley + Hemsley’s amazing huevos rancheros with homemade guacamole.

– Deliciously Ella’s sweet potato, lentil and coconut curry – I always make extra for lunch the next day, it’s one of those things that tastes even better the second time round!

– Jamie Oliver’s squash and spinach pasta rotolo is a favourite in my house.

– My New Roots Spring ‘abundance’ bowl – much more simple than it looks and the sauce is delicious.
