Coeliac Awareness Week

This week is Coeliac Awareness week.

Coeliac disease is a life-long autoimmune condition, caused by the immune system reacting to gluten.

Symptoms include digestive issues, tiredness and sometimes an itchy rash (known as dermatitis herpetiformis) but it can be tricky to diagnose.

It’s thought only 24% of those with the disease have received a diagnosis, but 1 in 100 people have the condition and that includes our PR manager, Flo.

I was diagnosed as Coeliac 18 months ago after a frustratingly long time feeling rubbish. Long story short, I’m feeling much better now!

I’ve always loved cooking, so I didn’t look at having to stick to a very strict gluten-free diet as a hardship – more as a chance to seriously experiment with food!

From the gluten-free bread recipes that actually work (I avoid shop-bought gluten-free bread as much as possible), to the best gluten-free spaghetti (Dove’s Farm Brown Rice Spaghetti) I’ve picked up lots of good tips through trial and error!”

Three of Flo’s favourite gluten-free recipes:

  1. Orange & Almond Cake
    Don’t think I have ever turned a slice of this down – and I’ve even been known to have it for breakfast!
    It’s not too sweet, flavoursome and makes a delicious pudding with a spoonful of greek yoghurt. This is my favourite recipe.
  2. Quinoa Breakfast Bowl 
    I never want to miss out on lazy weekend brunches with my boyfriend and friends, so I just use quinoa in place of bread.
    Think bacon, avocado, poached eggs, cherry tomatoes and a drizzle of pesto…!
    It’s really filling and I’ve converted lots of people to it.
  3. Comfort food
    When you’re really craving something warm and carb-y, Puy lentils cooked with a little red wine and a bay leaf or creamy (and very cheesy!) polenta really hits the spot!
