I have excelled myself with a doubly topical post today, and a delicious one at that.
This week is Coeliac Awareness Week and Sunday is World Baking Day – so I’m combining the two and sharing my favourite gluten-free cake recipe!
It also happens to contain no dairy. There is refined sugar in there, but we can’t always be perfect…
Orange & Almond Cake
Ingredients:
Two big oranges, roughly chopped, pips removed (leave the skin on, gives lovely flavour)
5 eggs (separated)
200g caster sugar
225g ground almonds
Handful of flaked almonds to decorate the top
Icing sugar to decorate
- Place the chopped oranges in a pan, add a splash of water, cover and gently simmer for about 30 minutes.
- Once cooked, very finely chop the orange or bung it all in a food processor until you have a puree.
- Whisk egg whites until they form stiff peaks, gradually whisk in half the caster sugar.
- Whisk the eggs yolks with the remaining caster sugar and add in your oranges.
- Gently fold the egg whites into the mixture – don’t be too vigorous or you’ll knock all the air out!
- Spoon into a cake tin, sprinkle the top with flaked almonds.
- Bake for 50 minutes at 180 degrees C
I love mine served with a dollop of Greek yoghurt and a drizzle of honey – yum.
